Our Espresso Craft
At Mighty Valley Coffee, every shot begins with care, clarity, and craft. The tools we use reflect our commitment to honouring the work that goes into each coffee—from farm to roast to cup.
We roast all our coffee in-house on a 2 kg electric drum roaster, which gives us total control and flexibility in small batches. Our roasting approach is intentionally lighter than many cafés, designed to highlight the natural qualities of each coffee and the hard work of the producers who grow it. We believe a good roast doesn’t mask the bean—it reveals it.
Behind the bar, our Victoria Arduino Athena Leva espresso machine allows us to brew by hand, using manual lever pressure for each shot. With no automation, every extraction is guided by the barista’s eye, feel, and flow. It’s espresso the slow way—and we like it that way.
For grinding, we rely on the Anfim SCODY II and CODY II for service, and the Ditting Lab Sweet for precision dialling. These grinders help us get the most out of every roast, with consistent, sweet, and clean extractions that showcase the character of each coffee we serve.
