Roaster's Notes This full bodied coffee features a balanced acidity, complex sweetness and subtle berry flavours layered over smooth dark chocolate notes. It's such an amazing versatile bean, you can run it through your espresso machine, use it for filter coffee or even make a beautiful cold brew. Johana and Armel's coffee works with every extraction method! 

Processing details Cherries are collected every three weeks. The first day’s collection is left in sealed bags for 24 hours and the second day’s picking is placed into the hopper above the depulper. The first day’s cherries are then placed on top and left for 12 hours before depulping.

Once depulped, the seeds are left to dry ferment in tiled tanks for 8 hours. The third day’s collection is then depulped and added to the dry mass before being placed into sealed plastic buckets where they are fermented another 40 hours. After this, the seeds are then rinsed and left in porous bags to drain before being placed into the dryer where they are consistency moved over the course of 12 days. The parchment is stored in Grainpro until it is ready to be delivered for milling.
